Geisha Wok and Noodle Bar Pty. Ltd.
Currently with one location and two more under way, this very successful wok and noodle bar has pushed the benchmark of creative urban chic dining in Cape Town. Its electric design and contemporary dining has set a new standard in South Africa. Its menus boast Asian tapas and a large selection of wok and noodle dishes with a sushi bar and a cocktail lounge.

This chefs agency provides short- and long-term placements of specialty chefs, with over 50 chefs currently placed all over the world from sushi chefs to confectionery, French to Lebanese. We have chefs of most nationalities on our books.
Opera (Theatre of Food)
Due to open in 2008, this three-storey cutting-edge eatery will boast a three-floor restaurant, open kitchen specialising in tasting menus from around the globe. This extremely upmarket and stylish restaurant promises to bring Michelin standards to South Africa.

Group Executive Consultant Chef and Director of Food and Beverage (consulting)
Conrad was recruited by the CEO of Sun International, Peter Bacon, and Director of Operations, Philip Georgas, to upgrade the standards of five- and six-star properties within the group. The main focus is the recruitment of new executive chefs and executive pastry chefs, food and beverage managers, restaurant managers, etc., building concepts within their restaurants, creating signature fine dining restaurants with name chefs and the development of wine lists and menus. Also creating new five-star and six-star breakfasts and creating the world’s best afternoon tea, also designed new ‘Private Dining Collection’, designed a series of luxury wedding packages which are rated some of the best in the world, also designed complete procurement specifications for F&B and all operating equipment for the group as well as heading up all F&B marketing and promotions for the entire group.
Sun International was founded in 1983 and is the leading resort and casino operator in Southern Africa with over 17 hotels and casinos throughout Southern Africa and in countries including South Africa, Zambia, Namibia, Botswana and Swaziland. The Group is the only significant operator of superior luxury hotels and major resorts in region. South African Airways 2005 – 2006
Contracted by CEO, Khaya Ngqula, to carry out a complete review and audit of entire food and beverage operation and build a new vision for the airline. Also designed complete new range of foods for breakfast, lunch and dinner on all regional and national business and economy classes as well as first-class and business class international flights and built new concepts for all first-class and business class lounges worldwide.
Also designed:
- New food and beverage training manual for all cabin crew staff
- New “invest” in the work force programme and employee development programme
- Team leadership training and development.
- HA training with health and safety guidelines
- Built model for complete restructuring of Air Chefs (the company that prepared the food for South African Airways)
- Advised on all procurement and compiled complete F&B specification booklets and researched and brought together procurement partners
- Advised on all human resources issues as well as the restructuring of the F&B management team, making it leaner and increasing productivity
- Created new billboard campaign to advertise new vision for food within the airline, built documents and created Food photo library to for promotional purposes
- Also designed the new SAA wine list and created “From the farm to the table “, - an initiative to assist small-scale South African wine farmers and promote the local market, protecting them from eing overpowered by the large multi-nationals
- Also advised on entire operating equipment, new packaging, restructuring and design of existing kitchens and also created training rooms for their chefs as well as learning materials and attempted to set up diploma cookery courses for their unskilled staff.
2005 - 2008
